Cinco de Mayo




I have a meeting tonight, and thought I'd make something festive to take along since I won't be able to go out for margaritas. I modified Krissa's Rum Cake recipe, using an orange cake mix, cheesecake jello pudding mix & Malibu rum. If it tastes good, I'll tell you all about it tomorrow. If it's awful, you'll never hear about it again...

The Child requested soft tacos tonight for dinner; I'd forgotten it was Cinco de Mayo until just now.

Today is cinco de mayo? I need to update my calendar. No plans. Although I would love some mexican food!!!

Thanks for reminding me. I'm glad I had cottage cheese for lunch because it's salsa, chips and Corona tonight. The cake looks and sounds delicious.

No big celebrations here -- although a friend suggested I find a very tiny sombrero for our prairie dog to wear...

I drove past three wonderful Mexican restaurants on my way home from work, wished I could go in all three of them, admired the festive balloons and the signs talking about mariachi bands and margaritas.

Instead, drove home to starving k ids, starving cats, starving dogs, and nothing to eat. Oh, and I'm out of wine.

Somebody shoot me.

I didn't do anything for Cinco De Mayo but this Rum cakes looks so amazing I am practically licking the screen. OH MY GOSH! WOW! You are so multi talented. It's sort of ridiculous...
